Ingredients for Melitzanes Salata:
• Eggplant – 1000 g
• Garlic cloves – 2 pcs.
• Lemons – 1/4 pcs.
• Parsley – 10 g
• Olive oil – 40 ml
• Ground black pepper – 1/4 tsp.
Directions for cooking Melitzanes Salata:
Wash and dry eggplant, brush with oil and prick several times. Place it into preheated 200C oven for 1 hour until it become tender. Chop the garlic and mash it with salt in a mortar until smooth. Cut the eggplant and gently scrape the pulp with a spoon. Add mashed garlic to the bowl with pulp. Stir until smooth. Add olive oil, lemon juice, salt, ground black pepper and fresh parsley leaves. Stir it once again.
